Even pity parties. Boo.
I know you are so sad and that you loved my pessimistic pity party and you came back today to see if I was still going to be pissy. No such luck today. Oh well, get over it. I did.
On to things that make me really happy like cooking and baking and holidays. Yeah!
The Hubs got me the Paula Deen Holiday Magazine (side note: Paula Deen is my FAVORITE cooking celebrity. I daydream about cooking with her and laughing with her. I think she has the BEST laugh in the entire world. Don’t you just love someone with a good laugh? You cannot beat someone with a good laugh that knows how to cook AND isn’t scared of using butter. Man, I love that! I hope I meet her someday)
Anyway, I digress. I am absolutely in love with more than half of the recipes in there. I made this fantastic dip the other day just for the heck of it. No special party or guests, just a yummy appetizer on a regular ‘ole weekday. I divided it in two batches and froze one thinking I would have it this week as an appetizer when my grandparents are here. Haven’t cooked the frozen one, but I’ll let you know how it turns out.
Creamy Dreamy (Yes, Julie that is the title) Spinach, Onion and Bacon Dip
1 pound bacon, cooked and crumbled
1 - 10 ounce package frozen chopped spinach, thawed and squeezed dry
1 - 10 ounce package frozen chopped onions, thawed and squeezed dry
3 - 8 ounce packages of cream cheese, softened
1 - 5 ounce package shredded parmesan cheese
1 cup shredded mozzarella cheese
1/2 cup mayonnaise
Preheat oven to 350 degrees
In a medium bowl combine bacon, spinach, onion, cream cheese, Parmesan, mozzarella, and mayonnaise. Spoon mixture into a 2 quart baking dish. Bake for 30 minutes, or until hot and bubbly. Serve with chips or crackers. (I used Stacy's Pita chips)
